Tender Chicken From The Crockpot
I love to cook chicken in the crockpot. Even tougher cuts of meat like legs and thighs turn out yummy and tender. Take this crockpot chicken fricassee recipe for example. It’s a family favorite that I have to cook at least every other week (especially during the cooler months). I don’t mind since it is a pretty frugal meal and cooking it in the slow cooker means I don’t have to do much. Can’t beat that.
I love crockpot recipes because I don’t have to slave over the stove to make a delicious, home cooked meal. I just throw everything in the pot, turn it on. When I come back a few hours later, the food is hot and ready to be enjoyed for dinner. I put these types of meals on our meal plans on days that I know I have a lot going on, or when I just want a day off. Yes, it does take a little bit of planning ahead and I have to remember to get dinner started right after breakfast, but it’s well worth that little bit of effort to enjoy the freedom the crockpot gives me the rest of the day.
